CHOCOLATE ALMOND MILK ICE CREAM

My son's all time favorite dessert is simple chocolate ice cream.  I get so ecstatic anytime I can figure out a healthier verison to his favorite foods.  I love this recipe too because you don't need an ice cream maker to make it!  Love that!  I bought an ice cream maker this summer, but wanted to create a recipe that didn't require one.   This is also perfect for those of you that are looking for a dariy free ice cream.

I love hearing the words, "Mommy, can I have some of that home made ice cream we made?"   The fact that he helped me make it, makes him happy and excited to eat it.  This came out so delicious!  I hope you enjoy it too, my son sure did.

CHOCOLATE ALMOND MILK ICE CREAM

1 cup almond milk
2 frozen bananas (freeze in small pieces)
1 heaping tablespoon of raw cacao powder
1 tablespoon raw honey or agave

DIRECTIONS

Blend all of the ingredients together in a high speed blender.  The consistency should be thicker than a smoothie.   Pour the mixture into a small baking dish or other flat container and chill in the freezer for about 2 hours.

Take the ice cream out of the freezer and scoop.  Eat plain or top it with your favorite toppings.  My son loves it plain and simple, but I might top it with sweet cacao nips and berries.

Store the ice cream in a sealed or covered container in the freezer.  Once you have had in the freezer for a few hours, it may seem really hard.  Just leave it out a few minutes before serving and it will be soft enough to scoup.

Enjoy!

HUFFINGTON POST: HUFFPOST TASTE + MATCHA GREEN TEA LATTE

I am back into the swing of things now after a week out of the country and trying to get over my jet lag.  Things are different in China... you cannot use Facebook or Blog sites like Blogger on any computer there.  It was  a great work trip, but it is definitely good to be home, back to familiar things.
I feel like it has been ages since I have posted and I do apologize.

Matcha Green Tea Latte

What a great surprise to find my Matcha Green Tea Latte Recipe on the Huffinton Post Taste section when I arrived home!  Check out their article on Immune Boosting Foods: 14 Healthy Recipes.  The Matcha Green Tea Latte Recipe is #14.

If you missed it before, here it is.  I could really use one right now.  I hope everyone had a wonderful weekend and have a great week!

BLUEBERRY + CUCUMBER SMOOTHIE

BLUEBERRY + CUCUMBER SMOOTHIE

Written by contibutor Britney Manuel of Btanjerine and A Simply Raw Life.

Looking to add some unique smoothies to my repitore,  I came across this one again from the app Whole Living Smoothies (here's the link to the website).  I am always trying to make sure to incorporate something green, I mean might as well since you won't taste it anyway.  And this one came out light and mild.  Perfect in my opinion!

A few health tips.  Berries are full of anti-inflammatory and disease-preventing stuff (too many words I can't pronounce but trust me it's good stuff).  And cucumbers are loaded with water to help keep you hydrated.  They are also a source of silica, a trace mineral that strengthens connective tissue.

The Line-up before

Et Voila! The finished product!

BLUEBERRY + CUCUMBER SMOOTHIE

THE LINE-UP

1/2 c. frozen blueberries
1/2 cucumber
1 c. almond milk
1 pear
2 dates

THE PROCESS

Blend all ingredients in a high speed blender until smooth.

Makes 1 serving approximately 2 cups.

Enjoy!

RAW: CHOCOLATE BANANA SHAKE

Hope everyone's morning is going well!  When I am craving some chocolately goodness, I LOVE making this chocolate shake.  It's simple, but sooo good.  I alway, always try to keep a stash of frozen bananas in the freezer.  When you use frozen bananas in a shake no one can fault it.  It makes any smoothie or shake rich and creamy.  You never know when you want to make some kind of creamy goodness.

This recipe serves 2 to 4

INGREDIENTS:

3 cups frozen bananas
2 cups almond milk or your favorite nut milk
1/4 cup agave nectar (or 2 packets of stevia)
1 teaspoon vanilla extract
2 heaping tablespoons of organic raw cacao powder or carob powder
pinch of sea salt

In a blender puree all the ingredients until smooth and creamy.

Enjoy!!

GRANOLA CEREAL WITH STRAWBERRIES

I think of myself as a lazy vegan/raw foodist.  Living in a household where others have different dietary habits, I don’t always want to make a full on meal after a long day just for me.  So I get kind of lazy and make this cereal if i’m just not feeling like doing much or if i’m bored of smoothies.   Sometimes you just want a bowl of cereal, simple and uncomplicated!

I stumbled upon this as I was trying to make the energy bars Felicia posted about here.  It was kind of a disaster.  In the end my bars were mostly chunks and crumbs (I ran out of dates opps!)  I made about 2 gallons of energy crumbs!  So, I decided it would be my new cereal.

GRANOLA CEREAL WITH STRAWBERRIES

1 cup almond milk (or any other nut milk)
1 cup of strawberries (or whatever fruit you have available)
1/2 cup of energy bars

**Note: This cereal could be raw if you follow the recipe for the energy bars here.  Mine however were vegan since I used rolled oats.

Break up the energy bar in a bowl.  Slice the strawberries and add them to the bowl.  Then pour the milk over it all et Voila! (I feel kind of silly giving directions to make cereal).

**Another variation I tried from Just Glowing With Health is to blend a cup of almond milk with a frozen banana in a high speed mixer.  This is a delicious variation,  and really the variations are endless, so have fun, there are no limits!

Is your mouth watering yet?
